This little soup packs in all the veg with spinach, beans and peas.

Quick and easy.

Super yummy!

All the goodness your body needs when it’s tired and run down!

…and oh so simple. Perfect for those cold nights when you get home late, need inspiration, but also too tired for anything complex.

*Great on its own but can also be jazzed up with a drizzle of olive oil, a sprinkle of seeds and/or crushed nuts.

**Need it to be slightly more substantial. Avocado and tomato toast go down brilliantly as does a cheese toastie!!

Super Greens Soup

Serves 2.

Time 15 minutes

Ingredients

  • olive oil (1/2 table spoons)

  • 1 onion chopped

  • 2 cloves of garlic crushed

  • pinch of salt and pepper (to taste)

  • 1 teaspoon vegetable stock

  • 600 ml boiled water

  • 200gr frozen peas

  • 1 tin x 400gr cannellini beans

  • 100gr spinach

  • 3/4 stalks of dill (optional)

 

Method

  • Heat oil.

  • Add chopped onions and garlic. Sauté until softened (five to ten minutes). Give the mix the occasional stir so that the onion does not burn.

  • Add salt and pepper (not too much as you can always add more but never go back!!)

  • Add the peas and beans, stir the mixture so that its coated in the onion and garlic mix.

  • Stir in the spinach, dill and vegetable stock and top up with water. Bring to boil and simmer for five minutes.

  • Blitz with hand blender.

Viola. Dinner is ready!
