Breakfast made easy. So, so easy!
Make this in advance, when you know your week will be busy or your weekend packed. When you need something to look forward to!
As with a lot of my recipes, this recipe came from a need to use and finish, an array half empty packets…nuts and seeds this time round. I seemingly go on all the health kicks. It never lasts and I am left with feelings of guilt and regret, every time I open a kitchen cupboard…
Well, that is until I discovered the art of making my own granola. I love the fact that I get to use up all these ingredients and make something that is delicious!
The great thing about this recipe is that you can tailor it to your needs and what you have around. If you dislike dried fruit- leave it out. Same with the seeds. You could replace the honey and maple syrup with your own sweetener. Add more nuts or reduce the Oats. Go wild!
This is my favourite interpretation for the moment as it hits just the right levels of sweetness and I love the tart taste of the sour cherry!
Makes one large jar
200g chopped mixed nuts
20g coconut shavings
70g pumpkin seeds
1 teaspoon of cinnamon
60 ml honey
60 ml maple syrop
60 ml coconut oil
90 g Sour Cherries
The How To:
Preheat the oven to 150 C
Get all the ingredients together as well as a decent size bowl to mix the ingredients, a small pan to heat the liquids and a baking tray to bake the granola. You will also need an airtight container to store the granola in.
Put the honey, maple syrup and coconut oil in pan and warm through, on a medium heat, until the mixture starts to simmer.
During this time chop the nuts.
Place the nuts, oats, pumpkin seeds, cinnamon and pinch of salt into the bowl.
Pour the syrup mixture over the oat mixture and mix until everything is coated.
Place the mixture evenly on the baking tray and bake for 30/35 minutes. Take the granola out after 15 and 30 minutes to give the mixture a stir.
When you take the tray out at the end, add the cherries. Mix the cherries in and wait for the granola to cool.
Once cool, store in an airtight container for up to a month
