Tinned Sardines! Tinned Fish! I hear you say, and to you I say ‘yes’. Tinned Fish. Cheap, Easy and Delicious.
My love affair with tinned fish, started on a road trip around France, in 2007. I walked into the most beautifully curated shop and realised it only sold TINNED FISH…mind you, they were all beautiful and colour coded. Completely won over, I spent way too much that day and arrived back in London with quite a few tins.
Armed with my tins, this dish came about one night when I could not be asked leaving the flat and scoured my fridge and cupboards for something…anything edible.
The Sardines, Tomato and Chilli blend into perfect harmony. Sweet yet tangy, sharp, creamy and just a little bit spicy.
This dish is best cooked on days when you need a kick of health AND comfort food. Its easy to make and also insanely cheap. The perfect end of the month dinner!
Spicy Sardine Dinner
Serves 2 /3
Time: 20/25 minutes
Olive Oil (2 table spoons)
Salt and Pepper
1 Onion finely chopped
2 Cloves of Garlic crushed
1 Red Pepper chopped
1 Tablespoon chilli flakes/ 2 fiery green chilli’s
1 x400g tin Chopped tomatoes (use 4/5 fresh ones if you have them)
2x 120g tins of Sardines in Tomato Sauce
1 Bag of Spinach
Gather all your ingredients and chop the onion and red pepper.
Heat Oil. Add the chopped onion. Cook on medium-high heat for four minutes to soften the onion (stirring occasionally)
Now stir in the garlic, chopped Red Pepper and chilli and cook for another five minutes, whilst stirring occasionally so the mixture does not get burned.
Add Salt and Pepper (as little or much as you like) (I start small and then add more if its needed)
Add the tinned tomato and let it simmer for 10 minutes.
Stir in the Sardines and Spinach and heat through.
Serve with either rice and salad, crusty bread, pasta dish or a baked potato.
